Greek chicken bowls are delicious and packed with Mediterranean flavors. Ever since watching the “Blue Zones” documentary on Netflix, my husband and I have tried to incorporate more recipes from Blue Zones around the world into our weekly meals. We use recipes from this recipe book:

We have taken what we have learned from the blue zones recipe book and applied it to a go to meal in our home, Greek chicken bowls! We typically use Greek chicken thighs but you could sub the chicken thighs for chicken breasts or even use shrimp! Here’s a simple recipe to make Greek chicken bowls:

Ingredients:

For the Greek Chicken:

  • 1 lb (450g) chicken thighs
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1 cucumber, grated and excess water squeezed out
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

For the Greek Bowl Toppings:

  • 1 cucumber, diced
  • 1 tomato, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • Fresh parsley, chopped

For Serving:

  • Cooked quinoa or rice
  • Pita bread or flatbread (optional)

Instructions:

1. Marinate and Cook the Chicken:

  1. In a bowl, combine the olive oil, minced garlic, dried oregano, dried thyme, paprika, salt, and pepper.
  2. Add the chicken to the marinade and toss until well coated. Let it marinate for at least 15 minutes.
  3. Preheat your oven to 400 degrees. Arrange the chicken on a sheet pan and cook for 20-25 minutes (or until interior temperature reaches 165 degrees).

2. Prepare the Tzatziki Sauce:

  1. In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper. Mix well until smooth and creamy. Adjust seasoning to taste. Refrigerate until ready to use.

3. Assemble the Greek Salad:

  1. In another bowl, combine the diced cucumber, tomato, sliced red onion, Kalamata olives, crumbled feta cheese, and chopped parsley. Toss gently to combine.

4. Assemble the Greek Chicken Bowls:

  1. To assemble, divide cooked quinoa or rice among serving bowls.
  2. Top each bowl with the Greek chicken, Greek salad, and a generous dollop of tzatziki sauce.
  3. Serve immediately, optionally with pita bread or flatbread on the side.
